I am just beginning the process of stripping the interior of my Holiday 250. It is taking three coats of stripper to get down to the wood. I am using Zinsser Strip Fast and I am thinking there has to be something better out there. Does anyone have any suggestions of strippers the have used that worked well?

IMO all strippers are a PITA.
Every one has heard of one that strips down to the wood in one coat.
But I have yet to use that particular brand.

The biggest thing that I do is to Wait! Just stripped the hull of my off shore. Used Citristrip. It is good because it is extremely thick so it stays put, and the smell is tolerable. I also covered the area with a very thin plastic dropcloth to help keep the stripper wet. Left it for at least 6-8 hrs before I touched it. I have heard of people leaving it for up to a day. It did all right.

I am going to be varnishing the interior on the same boat soon. I am going to remove old flakey varnish, feather out where needed, skuff the rest, clean and revarnish.. I want to see this boat in the water in my life time. LOL
Good luck,
Karl.
